One thing I love about spring and summertime is the abundance of fresh fruit at our fingertips. I’ve been doing the whole pick-up order thing, but I love getting to stroll through my local farmers market or go in and hand-pick my own fruits and veggies. I love the fact that there are so many fresh fruits to choose from.
Pineapple & Pineberry Season
Pineapple season is generally from March to July, and I have been heavily into pineapple this season. I usually buy two weekly. On a trip to our local Aldi to get—you guessed it—pineapples, I passed by the section where the berries were. Guess what I found? Pineberries! You know I had to grab those babies right away. I already had a few things in mind of what I wanted to create.
What is a Pineberry?
These blush-colored beauties get their name by combining “pineapple” and “strawberry” to create the cutest little berry called a pineberry. I remember the first time I saw one, I refused to eat it because they were too pretty to eat. I still shake my head at the fact that I almost let them go bad. I bought them again and I promise you, I was not letting that happen again.
Pineberries are low in acidity and very delicate. These berries are also healthy, low calorie, and a great source of folic acid, vitamin C, and antioxidants. I will say, the flesh of pineberries varies. I’ve seen pineberries that look a creamy, whiteish color all the way to a muted light pink, and some even with a hint of yellowish-white flesh. The inside is white. The seeds appear to be reddish-pink but they still have green leaves. They’re super cute. They do cost a little more than strawberries, but I look at it like this, you only get to enjoy them at certain times of the year. At least here in the South, so you might as well go for it!
How does a Pineberry taste?
It’s like pineapple, strawberry, pear, and apricot had a baby all swaddled up in a cute little blush, berry-colored blanket. To me, they have somewhat of a pineapple flavor with a hint of strawberry and more of an apricot-pear flavor. I think I just described the Blush Berried baby, but you get the point. I also think it varies with each bunch and their level of ripeness. They are absolutely delicious!
Some things you just have to try at least once. I knew I’d never tasted a fresh cup of juice of a freshly extracted pineberry, so I had to try it! Random fact about strawberries and pineberries—did you know that the little seeds are actually little fruits? I didn’t either!
Pineberry Pineapple Mint Cooler – Ingredients
- Pineberries
- Pineapple
- Fresh Mint
- Lemon
- Vodka
- Tonic Water
- Ice
Juicing vs. Muddling
I recommend juicing over muddling so you can extract as much juice out of each pineberry. You may end up using the entire carton when you juice, but you will get to taste what FRESH pineberry juice tastes like. It will yield approximately 3/4 to one (1) cup of fresh pineberry juice for the entire carton.
Revisions and Subbies!
- If you can’t find pineberries, feel free to sub them out for strawberries.
- Get two cartons, one to enjoy and one to make your cocktail.
- To make this a mocktail, simply leave out the vodka and replace it with sparkling water or tonic water.

Pineberry Pineapple Mint Cooler
Equipment
- Muddler
- Shaker
- Strainer
Ingredients
- 2 cups Pineberries, about 14 pineberries, juiced reserve a few for garnish
- 1 cup fresh pressed or extracted pineapple juice I used a juicer
- 4 ounces vodka
- 10 sprigs fresh mint
- 4 tablespoons fresh lemon juice save a few slices for garnish
- ¼ cup tonic water or sparkling water
- slices of lemon for garnish
Instructions
- Add vodka and fresh mint to the bottom of the shaker and muddle to release the flavors of the mint. About 5 to 7 good twists of the wrist.
- Next, add pineberry juice, pineapple juice, lemon juice to shaker.
- Fill shaker halfway with ice. Place top on the shaker and shake vigorously for 30 seconds and chilled.
- Add ice to two tall cocktail glasses.
- Next add fresh mint and a slice of lemon to each glass.
- Garnish each glass with a fresh pineberry and top with a splash of tonic water or sparkling water.
- Serve and enjoy!

I looked everywhere for pineberries, but to my disappointment, couldn’t find any here in North Wales (UK). However, I replaced them with strawberries and I have one word for you – DELICIOUS! Such a lovely refreshing drink for a scorching hot summer day! One of my absolute favourites!

I’m intrigued by those pineberries. I’m not sure we can find them here in Europe. But I’ll do some research as this cocktail sounds out of this world! If I don’t have pineberries would strawberries work or would it be better just to leave the berries out?
