Pineberry Pineapple Mint Cooler

This Pineberry Pineapple Mint Cooler is refreshing with a beautiful blend of fresh pineberry and pineapple juice, fresh mint, vodka, and a splash of sparkle.

Equipment

  • Shaker
  • Strainer

Ingredients
  

  • 2 cups Pineberries, about 14 pineberries, juiced reserve a few for garnish
  • 1 cup fresh pressed or extracted pineapple juice I used a juicer
  • 4 ounces vodka
  • 10 sprigs fresh mint
  • 4 tablespoons fresh lemon juice save a few slices for garnish
  • ¼ cup tonic water or sparkling water
  • slices of lemon for garnish

Instructions
 

  • Add vodka and fresh mint to the bottom of the shaker and muddle to release the flavors of the mint. About 5 to 7 good twists of the wrist.
  • Next, add pineberry juice, pineapple juice, lemon juice to shaker.
  • Fill shaker halfway with ice. Place top on the shaker and shake vigorously for 30 seconds and chilled.
  • Add ice to two tall cocktail glasses.
  • Next add fresh mint and a slice of lemon to each glass.
  • Garnish each glass with a fresh pineberry and top with a splash of tonic water or sparkling water.
  • Serve and enjoy!
