VEGETABLE STIR FRY SLAW

This delicious Vegetable Stir Fry Slaw is a beautiful mixture of colorful vegetables sautéed to perfection! It can be prepared in less than 30 minutes.

Ingredients
  

  • 12 ounces plant-based beef, cooked optional
  • 14 ounce bag coleslaw mix green/red cabbage + carrot mixture
  • 1/2 cup of shredded carrots
  • 2 cups of broccoli
  • 1/2 white or red onion, sliced
  • 1/3 cup green onions, chopped
  • 2 tablespoons sesame oil
  • 1 to 2 tablespoons thinly sliced ginger or 2 to 3 cubes of Pop & Cook ginger
  • 3 cloves of fresh garlic, grated or 2 cubes of Pop & Cook garlic
  • 1 teaspoon raw vegan agave, honey, or beet sugar
  • 2 tablespoons sesame seeds
  • 1/4 cup liquid aminos natural sodium*
  • 1 teaspoon vinegar
  • 2 tablespoons sriracha garnish

Instructions
 

  • Brown plant-based beef (crumbles) in skillet. Set aside.
  • In a wok or a large sauté pan, sauté slaw mix, garlic, broccoli, green onions, onions, carrots, fresh ginger, garlic, garlic powder, and onion powder for about 6 to 8 minutes over medium heat or until cabbage mixture is softened but still slightly crisp.
  • Add liquid aminos, sesame oil, cooked plant-based crumbles, sesame seeds, sriracha, vinegar, add honey (or sweetener of choice) and and mix well.
  • Heat through for an additional minute or two and then serve.
  • Garnish with green onions, sriracha, and sesame seeds.
  • Serve and enjoy!

Notes

  • You can make this slaw with or without plant-based beef crumbles.
  • Use approximately 1/2 tsp of ground ginger and garlic powder (or to taste) if you do not use fresh.
  • Liquid aminos tastes just as good as soy sauce and provides natural sodium.
  • If you have already have fresh ingredients, USE those instead. 
  • I love Impossible Foods plant-based beef. You can find it here or check your local grocery store. Also Beyond Meat (ground), Morning Star and Gardein plant-based crumbles are other great options.
