Strawberry Walnut Tostadas

Fresh strawberries, walnuts, and my favorite toppings bring together this deliciously sweet and savory creation.

Equipment

  • Food Processor
  • Large non-stick pan
  • Oil draining rack (not necessary)

Ingredients
  

  • 1 cup walnuts, ground use a food processor or coarsely chopped
  • 1 cup fresh strawberries sliced
  • 6 yellow corn tortillas fried
  • 1 ½ tablespoons, taco seasoning
  • 1 tablespoon olive oil
  • ½ cup feta cheese crumbles vegan crumbles work great!
  • ½ red onion chopped
  • 1 jalapeño, sliced
  • 1 cup chopped or shredded lettuce

Instructions
 

  • In a mixing bowl, drizzle 1.5 tablespoons of olive oil to walnuts.
  • Next add walnuts to food processor to grind them up.
  • Transfer walnuts to large non-stick pan on medium-high then add taco seasoning. Toss until well-coated.
  • Set walnuts aside.
  • Fry tortillas in a shallow pan for approximately 15-20 seconds on each side or until crispy and golden. Set aside on an oil draining rack or paper towel.
  • Place fried tostada tortillas on a plate to prepare to serve.
  • Add lettuce then spoon walnut topping onto tostada tortillas starting with the lettuce.
  • Next spoon walnut "meat" mixture on top of lettuce.
  • Add sliced strawberries, jalapeño, and sprinkles of feta.
  • Serve and enjoy!
  • 2 Tostadas - 1 Serving

Notes

  • Corn Tortillas can be baked in the oven on 375 degrees for 10 minutes. Brush with olive oil and flip midway. Remove from the oven and add your favorite toppings.
  • If you wish to make these tostadas with another source of protein (ground beef, chicken, etc.), go right ahead!
