Baked Parsnip Chips
Air fried or baked to the perfect crisp, these Parsnip Chips are a great way to enjoy chips with a fun twist!

- 4 to 5 parsnip vegetables - about 1 pound
- 2 tablespoons of olive oil
- ¼ teaspoon Greek seasoning or salt and pepper, to taste
- ¼ teaspoon black pepper, or to taste
Preheat oven to 375° F (ovens will vary).
Cut thin slices of parsnips using a food slicer. If using a sharp knife, carefully cut them into thin slices.
Add thinly sliced "chips" to a mixing bowl.
Next, drizzle olive oil and sprinkle with Greek seasoning (sprinkle lightly).
Toss them well to make sure all of the chips are coated with seasoning and olive oil.
Lay chips in a single layer on a parchment paper-lined baking sheet.
Bake chips for 15-20 minutes until chips OR have reached your desired crispiness.
Serve with your favorite dipping sauce or plain---and enjoy!
- Chips can burn easily so keep an eye out to see if they are to your desired texture.
- I've prepared my chips on the soft and crunchier side and they both are good.
- If you leave them in for about 15 minutes and they are still soft, they do harden as they cool.
- If you want an extra kick, try adding a few shakes of paprika and feel free to add a few shakes of Greek seasoning.
- Another seasoning I like to use is this Mis' Rubin's White Magic Seasoning here.
