1cupwalnuts, grounduse a food processor or coarsely chopped
1cupfresh strawberriessliced
6yellow corn tortillasfried
1½ tablespoons, taco seasoning
1tablespoonolive oil
½cupfeta cheese crumblesvegan crumbles work great!
½red onionchopped
1jalapeño, sliced
1cupchopped or shredded lettuce
Instructions
In a mixing bowl, drizzle 1.5 tablespoons of olive oil to walnuts.
Next add walnuts to food processor to grind them up.
Transfer walnuts to large non-stick pan on medium-high then add taco seasoning. Toss until well-coated.
Set walnuts aside.
Fry tortillas in a shallow pan for approximately 15-20 seconds on each side or until crispy and golden. Set aside on an oil draining rack or paper towel.
Place fried tostada tortillas on a plate to prepare to serve.
Add lettuce then spoon walnut topping onto tostada tortillas starting with the lettuce.
Next spoon walnut "meat" mixture on top of lettuce.
Add sliced strawberries, jalapeño, and sprinkles of feta.
Serve and enjoy!

Notes
Corn Tortillas can be baked in the oven on 375 degrees for 10 minutes. Brush with olive oil and flip midway. Remove from the oven and add your favorite toppings.
If you wish to make these tostadas with another source of protein (ground beef, chicken, etc.), go right ahead!
