Food Hack for Fresh Herbs and Veggies!
Sometimes I run out of ingredients. The total game changer here called Pop & Cook are convenient little cubes part of an herb tray. Case in point, I purchased some items to prepare dinner and The Mr. decided he wanted to use up my ingredients and not tell me. He left me without some of the fresh vegetables that I needed. I guess that’s what happens when we are both doing food challenges at the same time.
I was doing 21 Days of Vegetarian and he was doing 21 Days of Vegan/Plant-Based foods. The cubes are perfect because they are prepared within 90 minutes of harvest. This post is sponsored by Pop & Cook but the content and opinions expressed here are my own.
You can add fresh ginger and onion or Pop & Cook ginger and onion cubes to the stir-fry slaw mix. I don’t know about you, but I’m so ready for spring to get here. As a matter of fact, I don’t think I’ve ever been more ready. Before the New Year, we had quite a few days off due to a snowstorm hitting the south. All though it was beautiful, it felt like winter hit with a vengeance. It seems like the evening arrives much quicker, and I’m exhausted. I don’t even feel like cooking some days, so I try to find something quick and delicious.

So I made a Vegetable Stir Fry Slaw that was absolutely delicious! The cubes made it easy to prepare. I just popped my herbs out of the tray and BAM! Just like that…Dinner. Was. Served! It is one of the most brilliant ideas ever! And you can find them at your local Walmart. Now don’t get me wrong…if you have fresh ingredients on hand…use those!
Tasty Tips for this Vegetable Stir Fry:
- Use Impossible Ground Sausage or Ground Burger, walnuts, or pecans as your meatless option.

VEGETABLE STIR FRY SLAW
Ingredients
- 12 ounces plant-based beef, cooked optional
- 14 ounce bag coleslaw mix green/red cabbage + carrot mixture
- 1/2 cup of shredded carrots
- 2 cups of broccoli
- 1/2 white or red onion, sliced
- 1/3 cup green onions, chopped
- 2 tablespoons sesame oil
- 1 to 2 tablespoons thinly sliced ginger or 2 to 3 cubes of Pop & Cook ginger
- 3 cloves of fresh garlic, grated or 2 cubes of Pop & Cook garlic
- 1 teaspoon raw vegan agave, honey, or beet sugar
- 2 tablespoons sesame seeds
- 1/4 cup liquid aminos natural sodium*
- 1 teaspoon vinegar
- 2 tablespoons sriracha garnish
Instructions
- Brown plant-based beef (crumbles) in skillet. Set aside.
- In a wok or a large sauté pan, sauté slaw mix, garlic, broccoli, green onions, onions, carrots, fresh ginger, garlic, garlic powder, and onion powder for about 6 to 8 minutes over medium heat or until cabbage mixture is softened but still slightly crisp.
- Add liquid aminos, sesame oil, cooked plant-based crumbles, sesame seeds, sriracha, vinegar, add honey (or sweetener of choice) and and mix well.
- Heat through for an additional minute or two and then serve.
- Garnish with green onions, sriracha, and sesame seeds.
- Serve and enjoy!
Notes
- You can make this slaw with or without plant-based beef crumbles.
- Use approximately 1/2 tsp of ground ginger and garlic powder (or to taste) if you do not use fresh.
- Liquid aminos tastes just as good as soy sauce and provides natural sodium.
- If you have already have fresh ingredients, USE those instead.
- I love Impossible Foods plant-based beef. You can find it here or check your local grocery store. Also Beyond Meat (ground), Morning Star and Gardein plant-based crumbles are other great options.
