Warm weather is here and I couldn’t be more excited! Being in a “paradigm” has completely shifted how I view the warmer months. Fall is my absolute favorite season, but I couldn’t wait for warm weather, sunshine, and blue skies. All of the beautiful things that come along with this time of year.

The BYOF AFFAIR
My line celebrated our 22nd Anniversary over Zoom when my LS popped on the scene with this sammich that made me clutch my pearls! In a good way, of course. And speaking of sammiches, make sure you check out one of my favorite breakfast sandwiches here. Back to this sandwich. This was a BYOF event, obviously. So here she is with this plant-based burger (that looked so dang good) that she ordered from a local spot in her city. I wanted one, but unfortunately we don’t have a spot like that here in BHAM (yet). Don’t worry it’s on its way. Now, I am a flexitarian through and through, but I love a good, medium steak just as much as I love a big, juicy plant burger. As long as it tastes good, I’m in!
HB started drooling over the screen then he was putting on clothes. Me looking confused and laughing, I said… “what are you doing?” He said, “I’m about to make one of those!” *staring and pointing at the screen* I knew in that moment he was so serious and headed to the grocery to pick up the ingredients to make US burgers. That’s right…US. See what I did there? LOL! Her burger looked absolutely amazing, so yeah, I totally cosigned the idea.
What Makes This Burger Unique?
We used traditional shrimp on our burgers. The one she had was made with vegan shrimp. We also haven’t ventured out on the vegan shrimp train just yet, and honestly, they look weird to me (IMO). I know, I will eventually get past this—but still. I knew this burger was going to be GOODT, either way! You can make this Surf and Turf Burger totally vegan by using vegan cheese and vegan shrimp.
A Meal Fit for Flexitarians and Pescatarians
Perfectly plump shrimp are amazing on this Surf and Turf Burger! All you do is sauté your favorite veggie toppings, then top your cooked plant-based burger (patty) with veggies, delectable shrimp, then add swiss cheese, melt in the oven then—BAM! A sandwich so perfect for spring/summer!
This burger is the true definition of Surf and Turf! You can keep it carb-free with no bun, wrap your burger in a lettuce bun, or add a bun (I like Brioche buns) to make this one of the best burgers you’ve ever tasted!

Surf and Turf Burgers
Ingredients
- 1 pound large shrimp, tail off
- 4 plant-based burger patties, cooked
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red bell pepper, sliced
- 8 ounces Portobello caps, diced
- 1 white onion, sliced
- 1/2 tablespoon fajita seasoning in the packet works great
- 8 slices Swiss cheese
- 2 tablespoons olive oil, divided
Instructions
- On medium/high heat, add oil to pan, then add vegetables.
- Next sprinkle fajita seasoning on vegetables, sauté reserving a nice crunch, then set aside.
- Cook plant-based burgers thoroughly then set aside. (Prepare to add toppings after shrimp are cooked).
- In another pan on medium heat, add fajita seasoned shrimp. Cook on medium heat about 2 to 3 minutes on each side. Cook thoroughly.
- Next, add your vegetables to your burger patty, top with shrimp, then add two slices of swiss cheese to each burger (patty).
- Place in the oven on broil until cheese has melted.
- Serve with or without a bun—and ENJOY!
Notes
- Sub traditional shrimp with vegan shrimp and use non-dairy cheese to make this burger totally VEGAN.
- Blackened seasoning works beautifully on the shrimp if you do not have fajita seasoning.
