EXPLORING PLANT-FORWARD FOODS
Can we go back to when I committed to 21 Days of Raw Food? That was seriously one of the hardest things I’ve ever done. In life. But I survived. I basically committed to doing a Raw Food Detox. With raw foods, you have to be intentional and do a bit of research. It was challenging at times, especially when I wanted to bake, roast or even sauté my vegetables. I ate everything from Dragon Fruit, Cocoa Dates, and even Flax Snacks. Yes, all raw. I tried it all. It even ended up purchasing a dehydrator, that I never used more than a few times. Thank goodness my new Ninja Foodi Air Fryer has this feature so I’ll be able to resume dehydrating foods in the future.
Raw foods have so many great health benefits when it comes to consuming fruits, veggies, and good heart-healthy proteins. This is actually what started my exploration into the meatless world.
***Strawberry Walnut Tostadas Enter The Chat!***
WHAT IS A TOSTADA?
Tostada is Spanish and means “toasted” in English. It is said that once tortillas were too stale, they toasted them to make tostadas. Tostadas are typically fried/crispy tortillas with guacamole and refried beans spread on top. I’ve had them topped with vegetables such as white onions, tomatoes, fresh chunky salsa, and other toppings. They can be made using: beef, chicken, pork, or shrimp, and the newest—meat alternatives (such as nuts or Impossible Foods “ground beef”). You can add your favorite toppings: lettuce, peppers, tomatoes, cilantro, pico de gallo, beans, sour cream, and even cheese.
WHAT SETS THESE STRAWBERRY WALNUT TOSTADAS APART?
It’s the flavors for me!
Fresh strawberries, walnuts, fresh-sliced jalapeño for a bite, feta cheese, and lettuce go well with this combination. It’s something about vivacious feta cheese crumbles intertwined with perfectly sweet, sliced strawberries that make each bite delectable.
CAN THESE STRAWBERRY WALNUT TOSTADAS BE MADE PLANT-BASED OR VEGAN-FRIENDLY?
Absolutely! To make the walnuts a meat alternative, I drizzled olive oil on my walnuts, added them to my food processor, ground them to the perfect texture of “meat”, then added them to the skillet on medium-high heat with taco seasoning. I tossed them until warm and fully coated and ready to be scooped on top of my tostada tortilla.

Strawberry Walnut Tostadas
Equipment
- Food Processor
- Large non-stick pan
- Oil draining rack (not necessary)
Ingredients
- 1 cup walnuts, ground use a food processor or coarsely chopped
- 1 cup fresh strawberries sliced
- 6 yellow corn tortillas fried
- 1 ½ tablespoons, taco seasoning
- 1 tablespoon olive oil
- ½ cup feta cheese crumbles vegan crumbles work great!
- ½ red onion chopped
- 1 jalapeño, sliced
- 1 cup chopped or shredded lettuce
Instructions
- In a mixing bowl, drizzle 1.5 tablespoons of olive oil to walnuts.
- Next add walnuts to food processor to grind them up.
- Transfer walnuts to large non-stick pan on medium-high then add taco seasoning. Toss until well-coated.
- Set walnuts aside.
- Fry tortillas in a shallow pan for approximately 15-20 seconds on each side or until crispy and golden. Set aside on an oil draining rack or paper towel.
- Place fried tostada tortillas on a plate to prepare to serve.
- Add lettuce then spoon walnut topping onto tostada tortillas starting with the lettuce.
- Next spoon walnut "meat" mixture on top of lettuce.
- Add sliced strawberries, jalapeño, and sprinkles of feta.
- Serve and enjoy!
- 2 Tostadas – 1 Serving
Notes
- Corn Tortillas can be baked in the oven on 375 degrees for 10 minutes. Brush with olive oil and flip midway. Remove from the oven and add your favorite toppings.
- If you wish to make these tostadas with another source of protein (ground beef, chicken, etc.), go right ahead!
