So I found these JUST Egg Folded Plant Eggs at Whole Foods. I know, I know…PLANT eggs. Don’t worry…I can see your expression as you read this post. Trust me. I said the same thing. After I decided to join a meatless journey for 30 days with one of my friends, I decided to give them a try.
Hear me out…
I’ve been eating plant-based meals with a little flexibility in between. I’m always excited to try new plant foods in hopes of enjoying them. Y’all know, I don’t do unpleasant, tasteless food no matter how “healthy” it is. Like…at all. I will figure out a way to make it good or chunk it. Just being real.
The Biscuit Ministry
On Sunday mornings, I usually make pancakes or waffles, but on this particular day, I ended up making biscuits. Two days in a row! Not too shabby, huh? Considering this was my third time making homemade biscuits!
The first time I made biscuits from scratch was at a Blogger Event hosted at Ruby Sunshine Brunch. I haven’t perfected them just yet, but I came a little closer this time. I had just enough dough to fit into my cast iron skillet. Just wait…I will become a Biscuit Slanger before you know it!

The Folded egg is pretty yummy. Gives me the vibes of the egg on the McDonald’s breakfast sandwich. Nice texture and very flavorful. It’s cholesterol-free and can be made in the toaster! Simple as that.

Fakin’ Bacon, Egg + Cheese Biscuit Sandwich
Ingredients
- 4 Strips of Fakin’ Bacon Vegan Bacon – Smoky Tempeh
- 1 JUST Egg Folded
- 1 to 2 slices of cheese or vegan cheese
- 1 biscuit Vegan: Frozen, Fresh, or Ready-to-Bake, prepared (ready to eat)
Instructions
- Assemble Biscuit Sandwich to your liking.
- Place plant egg Fold on top of bottom half biscuit.
- Top with slices of Fakin’ Bacon.
- Next, add cheese, and top with the other half of biscuit.
- Serve and enjoy!
Notes
- I like Smoky Tempeh vegan bacon slices by Lightlife. I like to get them good and crispy!
- I air fried my vegan bacon strips for approximately 5 minutes. Can also be prepared in a skillet.
- JUST Egg Folded can be prepared in the toaster!
I like to use vegan mayo or honey on both slices of the biscuit, and drizzle honey on top! Mmmm! - I absolutely love Violife as well as Chao vegan cheese. I used Violife for this recipe.

My boyfriend is allergic to eggs, so I have been eyeing the JUST “eggs” for awhile now. It usually isn’t a big deal in our household to not have eggs around, but I definitely do want to try them out just to have a nice backup. Thanks for sharing!
