I know it’s the holiday season and traditional holiday foods usually pull rank—but I love that I can enjoy one of my favorites even during holidays. I’m huge fan of ethnic-inspired foods (as most of you probably know by now), so I wanted to add a special twist to two of my favorite cuisines. For the holidays I wanted to make something fun and festive for my family and friends to enjoy!
Everyone loves tacos, right? Of course they do! Chipotle Shrimp Taco Bites are perfect for any holiday gathering and quite frankly any time of the year! That’s right…TREAT YO’ SELF! This fun appetizer is also perfect for game-day eats and snackin’!
I started eating guacamole about two years ago, and there was no going back. For my taco bites, I decided to use wontons for my taco “shell”, and I stuffed them with GOODFOODS Chunky Guacamole. L-O-V-E! It tastes fresh just like it was made tableside.
It was seriously so good, I almost ate the entire container before I finished assembling my taco bites for my guests (don’t try this at home, lol). Thank goodness I bought extra. The Chunky Guac was the perfect compliment to my Chipotle Shrimp Taco Bites. They’ll even have you going back for seconds and maybe even thirds. You can taste the tomatoes, garlic, and onions with every bite, and they make the perfect appetizer/snack with the right amount of punch and flavor for entertaining guests!

CHIPOTLE SHRIMP TACO BITES
Ingredients
- 24 wonton wrappers
- 1 pound of large shrimp peeled with tails off (approximately 24)
- Tableside Chunky Guacamole fresh or store-bought
- chipotle garlic seasoning
- 2 tbsp fresh chopped cilantro
- 1/2 cup of Mexican-blend shredded cheese optional
- lime for garnish
Instructions
Directions for Wonton “Taco Shells”
- Preheat oven to 375 degrees F
- Spray 24 cup mini muffin pan with cooking spray
- Nestle one wonton wrapper into each muffin cup (make sure the bottom is extremely flat so they wills stand up straight)
- Bake cups for approximately 5-6 minutes or until golden brown, set aside
Directions for Shrimp and Assembling Taco Bites
- Season shrimp with chipotle garlic seasoning
- Cook shrimp in cast iron or non-stick skillet over high heat until pink and curled
- Remove shrimp from skillet and place on a plate
- Place wonton wrappers onto a serving plate or tray
- Spoon one heaping teaspoon Chunky Guacamole into each wonton cup
- Place 1-2 shrimp on top of guacamole
- Top with fresh, chopped cilantro
- Sprinkle with Mexican-blend cheese, optional
- Serve and enjoy!
