Baked to the perfect crisp, these Parsnip Chips are a great way to enjoy chips with a fun twist! They are paleo, plant-based and so delicious. This parsnip chip recipe also includes an air fryer option. You will be adding this root vegetable to your favorites list!

What is a parsnip?
A parsnip is a root vegetable that closely resembles a carrot or parsley root. It has a beige-cream color and when eaten raw, it has a semi-sweet flavor. You can also taste the hint of sweetness when it’s cooked.
What is a root vegetable?
It’s basically the edible part of a plant that you can find growing underground. Other root vegetables include but are not limited to sweet potatoes, yucca, yams, ginger, and turmeric.
The Parsnip Experience
Parsnips just sound interesting, right? After I found out exactly what they were, I was hoping I would enjoy them so I could add a new vegetable into the rotation. Lucky for me, I attended a Birmingham Food event called, Eat Drink Bham (recap here), and one of the restaurants had a sample of parsnips coupled with a beer pairing for me to try. Guess who loved them?
I wanted my first experience (well…second) with parsnips to be enjoyable. The first time I was able to use my food processor (slicer) to make Parsnip Chips! Yummylicious! I was looking for ways to get in more veggies, so I am happy that these turned out perfect! Eat More Veggies they say. I must add, that I absolutely love Lay’s potato chips. You know, “You can’t eat just one”. Me = whole bag….but trust me, there is no shame. On the flip side, Parsnips Chips are the perfect, low-carb snack that satisfies my chip craving simply by making a healthy swap. They are seriously so good!

Parsnip Root Vegetables
Olive Oil
Greek Seasoning
Black Pepper
How I Prepare Parsnip Chips
Since I’ve upgraded…whoot whoot, I now use my mandoline slicer (about 3mm – setting) and slice them thin. You can find a similar one here. Also, you can use a knife, just make sure they are thin enough.
At first, when I prepared my “chips” the first few times, I made them two ways. The first time, I baked them until they were crispy. They actually tasted like kettle-cooked chips. The second time, I took them out early and the texture reminded me of a thinly sliced potato round.
Note: the smaller the parsnip once sliced, the easier they crisp and sometimes brown/burn. In addition, make sure they are well coated before baking/air frying.
Can I use the air fryer?
Update! Also updated pics. You absolutely can make these in the air fryer. I recommend putting your setting on 375° F and baking them for approximately 7 to 10 minutes. Air Fryers do vary. This is my air fryer (Ninja Foodie Dual) and 375° F was a great setting for me. You would use the same process for prepping them to go in the oven as you would the air fryer. After you peeked at them to see if they looked done, I would turn off the air fryer and let them continue cooking/resting to continue crisping.

Baked Parsnip Chips
Equipment
- Sheet Pan
- Food Slicer
- Air Fryer, optional
- Parchment Paper
Ingredients
- 4 to 5 parsnip vegetables – about 1 pound
- 2 tablespoons of olive oil
- ¼ teaspoon Greek seasoning or salt and pepper, to taste
- ¼ teaspoon black pepper, or to taste
Instructions
- Preheat oven to 375° F (ovens will vary).
- Cut thin slices of parsnips using a food slicer. If using a sharp knife, carefully cut them into thin slices.
- Add thinly sliced "chips" to a mixing bowl.
- Next, drizzle olive oil and sprinkle with Greek seasoning (sprinkle lightly).
- Toss them well to make sure all of the chips are coated with seasoning and olive oil.
- Lay chips in a single layer on a parchment paper-lined baking sheet.
- Bake chips for 15-20 minutes until chips OR have reached your desired crispiness.
- Serve with your favorite dipping sauce or plain—and enjoy!
Notes
- Chips can burn easily so keep an eye out to see if they are to your desired texture.
- I’ve prepared my chips on the soft and crunchier side and they both are good.
- If you leave them in for about 15 minutes and they are still soft, they do harden as they cool.
- If you want an extra kick, try adding a few shakes of paprika and feel free to add a few shakes of Greek seasoning.
- Another seasoning I like to use is this Mis’ Rubin’s White Magic Seasoning here.

I tried my first batch at 15 minutes, they weren’t crisp enough, I put them in for another 5 and I still didn’t get them crispy enough.
Next batch was 23 minutes, some were right, the smaller ones were too burnt.
My wife preferred garlic salt, salt and pepper, she still loved them though.
