Nutella Stuffed French Toast with Berries

Sweet with a little bit of tart, this Nutella Stuffed French Toast with Berries is cooked on both sides until golden brown with layers of fresh cranberries, strawberries, and hazelnut cocoa spread.

Ingredients
  

  • 1 cup cranberries, fresh or frozen I used fresh
  • 1/4 cup water
  • 1 pinch granulated white sugar

Ingredients for Stuffed French Toast

  • 3 large eggs
  • 1/3 cup heavy cream or milk
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon cinnamon or more to taste
  • 1 tablespoon brown sugar
  • 1 pinch salt
  • 1 tablespoon Confectioners’ sugar for custard (optional) and used for dusting garnish
  • 2 tablespoons shortening or more for frying The thickness of your bread will determine how much shortening or butter you will need
  • 8 slices thick bread, brioche, or bakery style
  • 1/2 cup Nutella®, divided
  • 1 cup sliced strawberries sliced

Instructions
 

Soften Cranberries and Create Sauce

  • Add cranberries to the skillet over medium-high heat with water and a pinch of sugar.
  • Toss cranberries in skillet for 2-3 minutes to soften. The cranberries will release a delicious sauce.

Instructions for Frying French Toast in Skillet

  • Whisk eggs, milk or heavy cream, pure vanilla extract, brown sugar, cinnamon, confectioners' sugar, and pinch of salt together in a shallow bowl.
  • In a 10-12 inch skillet, melt butter/shortening over medium-high heat.
  • Dip both sides of bread in egg mixture (custard), then transfer to a skillet to cook on both sides until golden brown.
  • Set slices aside to prepare to Stuff French Toast.
  • Add sliced strawberries and cranberry sauce mixture. The cranberry juices adds a delicious flavor!
  • Repeat by spreading another layer of Nutella® on another piece of toast, then cut in half.
  • Lastly, add the other slice of toast to the top and sprinkle confectioners’ sugar. Layer to your liking.
  • Serve and enjoy!

Notes

I like using this bread for my French Toast. It's perfect for our household! 
Cooking the cranberries in a saucepan will create a delicious sauce to add to your French Toast as well as soften the cranberries and cut some of the tartness.
