Line two baking sheets with parchment paper and have two microwave-safe bowls on stand-by. See notes, for optional melting method.
Melt white chocolate chocolate chips reducing power to 50% to 70% for 20-30 second increments. Stirring in between until completely melted and smooth. Halfway through melting process add vegetable oil.
Once melted, stir in 1/4 teaspoon to 1/2 teaspoon of peppermint extract.
Drizzle white chocolate evenly over popcorn.
Repeat steps for semi-sweet chocolate chips.
Melt semi-sweet chocolate chips reducing power to 50% to 70% for 20-30 second increments. Stirring in between until completely melted and smooth. Halfway through melting process add vegetable oil.
Once melted, stir in 1/4 teaspoon to 1/2 teaspoon of peppermint extract.
Drizzle melted chocolate over popcorn and toss gently a few times using a rubber spatula.
While chocolate is cooling, use a mason jar, canned good, or rolling pin to crush peppermint into tiny pieces.
Once chocolate has cooled, combine both white and semi-sweet chocolate popcorn alternating between the two to give a good mix of both flavors.
Top with crushed peppermint and sprinkle with festive sprinkles!
Serve and enjoy!
