Equipment

  • Silicone spatula
  • Baking Sheet
  • Parchment Paper

Ingredients

  • 12 ounce bag, premium baking white chocolate chips
  • 1 teaspoon cherry extract cut back to 1/4 teaspoon if using dried cherries OR leave extract out all together
  • ¼ to ½ teaspoon culinary/food (edible) lavender - reserve a few lavender flowers to sprinkle on top of bark before going in the freezer
  • 1 teaspoon canola or vegetable oil

For Dried or Dehydrated Cherries

  • ¼ dried cherries to sprinkle on top of chocolate before going in the freezer OR
  • 10 dehydrated cherries, roughly chopped to sprinkle on top of chocolate before going in the freezer

Instructions

  • Melt white chocolate chips in a microwave-safe bowl until completely melted (15 to 30 second increments) - Note: you can use a double broiler to melt your chocolate as well.
  • Add in cherry extract, dried cherries (optional - see notes), lavender, and canola or vegetable oil. This will help give melted chocolate a smoother texture when stirring.
Option for lavender: You can opt to sprinkle lavender on top of white chocolate before placing it in the freezer OR mix it in.
  • Quickly pour melted white chocolate mixture onto parchment-lined baking sheet and smooth layer with a spatula. You can sprinkle pieces of dried cherries and lavender flowers here.
  • Place the sheet pan of white chocolate in the freezer for 30 minutes (minimum) to an 1 hour.
  • Once completely set, remove white chocolate from baking sheet, place bark on a cutting board or flat surface, and break into pieces.
  • Serve and enjoy!

Updated to include Dried Cherries:
For packaged cherries: All you need is a 1/4 cup of dried (dehydrated) cherries (roughly chopped to spread them evenly). After you pour your melted white chocolate onto your baking sheet before placing in the freezer, sprinkle pieces on top and use a toothpick to press down so they can sink into white chocolate. Place in the freezer.
For dehydrated cherries: Dehydrate your cherries for 6 hours. I have a Ninja Foodi Air Fryer with a dehydrator feature. I dehydrated my cherries on my highest setting (165° F) for 4 hours then reduced to 130° F then 105° F to finish them. If your setting only goes to 105° F, dehydrate for 6 to 8 hours.
