Shrimp Cauliflower Fried Rice is delicious and easy to make! Mixed vegetables, shrimp, and amazing flavors to make this the perfect meal any day of the week.

- 12 ounces to 1 pound of small shrimp peeled, and deveined (optional)
- 2 large eggs
- 1/2 cup of frozen green pea cooked
- 1/2 cup of chopped or sliced carrots
- 1/2 cup of chopped white onions
- 3-4 cups of riced cauliflower cooked
- 3 tablespoons of Liquid Aminos or reduced sodium soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons extra virgin olive oil, high quality
- 1/2 teaspoon of ground ginger
- salt and pepper to taste
Heat olive oil in a large skillet or wok over medium heat.
Add shrimp and cook for approximately 3 minutes or until they are pink. Add a few shakes of salt and pepper if you wish. Set shrimp aside.
Scramble two eggs (separate pan). Set aside.
Add onion, carrots, and peas to large skillet or wok and cook vegetables until they are tender.
Stir in riced cauliflower. Add liquid aminos, sesame oil, ground ginger and stir crazy. Just kidding. Stir for approximately 3-4 minutes so the "rice" can cook through and become soft. Toss fried rice for about two (2) minutes, then stir in shrimp.
Serve and enjoy!
