Crispy Oven Okra with Lemon-Dill and Garlic Aioli

Crispy Oven Okra is roasted to perfection with a flavorful crunch. Served with a delicious, Lemon-Dill and Garlic Aioli.

Ingredients
  

  • 1 pound (lb) fresh okra, rinsed, dried and sliced
  • 1 tablespoon extra-virgin olive oil or avocado oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cayenne pepper optional
  • 1 teaspoon paprika (reg or smoked)
  • 1 teaspoon black pepper

Lemon-Dill Garlic Aioli

  • 1/2 cup Vegan Mayo (or regular)
  • 3 cloves fresh garlic, chopped fine
  • 1 to 2 tablespoons fresh dill, chopped into small pieces
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon sriracha

Instructions
 

  • Make Lemon-Dill and Garlic Aioli and chill until Crispy Okra is ready to serve.
  • Preheat oven to 375 degrees.
  • Place sliced okra in a large mixing bowl.
  • Add oil and seasonings, and toss gently to coat (okra seeds will be loose).
  • Spread okra onto baking sheet carefully in a single layer without overcrowding.
  • Roast in the over for 20-25 minutes, or until desired crispiness.
  • Serve and enjoy!

How To Make Lemon-Dill and Garlic Aioli

  • In a small bowl, add ingredients for aioli.
  • Mix to combine.
  • Chill until Crispy Oven Okra is ready to serve.
  • Serve as a dipping sauce.

Notes

  • Dried Dill will work, but fresh is best!
  • Oven temperatures may very. I will suggest roasting okra anywhere between 375 to 425 degrees. 
  • This recipe is vegan-friendly!
