Reimagining Brownies
What looks to be some type of fudgy-brownie-sweet treat is exactly what it is. But…there’s a twist! They have a secret ingredient! I guess you can tell by the title of this blog post that it’s the sweet potato. You’re right! Sweet Potato Brownies are made with only two ingredients. Who would have thought?
I attended a Christmas party, and me being the Foodie Connoisseur that I am, I brought the sweet treats. I decided on Peppermint Bark Fudge – made with pureed pumpkin. So I said, if pumpkin worked, surely sweet potatoes could work with brownies. So I tried it…and here we are.
Traditional Brownies vs. Sweet Potato Brownies
Keep in mind, these brownies will not be chocolate overload, super sweet, super-rich brownies. They are 2-ingredient brownies that show that a simple healthy swap can still be delicious! They are also perfect for those who want a “healthier” option to enjoy their favorite sweet treat.
What do you need for two-ingredient Sweet Potato Brownies?
One box of brownie mix and pureed sweet potatoes. That’s it! These fudgy Sweet Potato Brownies are considered seasonal, but I would encourage you to enjoy them all year long! They are SO easy to make!
When it comes to sweet potatoes and pumpkin, the sweet potato will always win! All though I do love pumpkin baked goods, like my Pumpkin Chocolate Chip Muffins, I couldn’t wait to share these brownies. If you’ve followed my journey since the beginning, I used to come up with healthy swaps for my WW recipes. That’s kind of how we got here. I don’t follow WW anymore but some things just stuck.

Brownie Mix You Will Need
You all know I love easy recipes or recipes easy enough for someone new to cooking to follow. Get your favorite 18 oz. box of fudge brownie mix: Betty Crocker, Duncan Hines, Ghirardelli, or whatever brand you choose—and you will mix together brownie mix with 15 ounces of sweet potato puree. Depending on the moisture of your puree will determine if you need to add a little water to your mixture. You will not need any eggs or oil.
CAN I MAKE PUREED SWEET POTATOES FOR THIS RECIPE?
Absolutely! I’ll share how I puree my sweet potatoes. This can be done in three ways:
- Wash two large sweet potatoes thoroughly and bake in the oven at 350 degrees on a parchment-lined baking sheet for 30-40 minutes, until tender. You should be able to pierce them easily with a fork. The puree process: Allow sweet potatoes to cool then remove the jackets. Next, break up sweet potatoes to place into your blender. Add about 1/4 cup of water since the potatoes are starchy. This will also help them blend smoothly. You only need 15 oz. of pureed sweet potatoes.
- Boil sweet potatoes (in jackets) on the stove for 20-25 minutes or until tender. Remove jackets then follow the puree process above.
- Purchase canned pureed sweet potatoes from your local grocery store.

Sweet Potato Brownies
Equipment
- Baking Sheet
- Parchment Paper
- Blender or Food Processor
- 8 x 8 baking dish
Ingredients
- 15 ounces pureed sweet potatoes, cooked or 15 ounce pureed sweet potatoes, canned
- 1 18 oz box Fudge Brownie mix
Optional Ingredients
- 1/4 cup water, if needed to help with mixing
- 1 cup semi-sweet or dark chocolate morsels optional (If you want sweeter brownies) – see notes
Instructions
- Preheat oven to 350 degrees.
- Spray an 8″ X 8″ baking pan with non-stick spray and set aside.
- In a large bowl, combine pureed sweet potatoes and brownie mix; stir until smooth. Optional: if you want to add chocolate chip morsels, add them here.
- ***Do not follow directions or add ingredients listed on the box***
- Pour mixture into 8" x 8" baking dish.
- Bake until edges are slightly firm and top center is dry to the touch, about 25-35 minutes OR until set. Note: Batter may look undercooked; this is okay. This will allow them to have their fudgy-brownie consistency.
- Allow brownies to cool, then cut into 12 brownie squares.
- ***See notes for additional instructions***
- Serve and enjoy!
Notes
- You may have to add water to your brownie mix and pureed sweet potatoes to make mixing easier.
- If you like a fudge-like brownies, cover and chill for at least two hours. You can chill overnight in an airtight container. Remove when ready to serve.
- Add 1 cup of semi-sweet or dark chocolate morsels if you want your brownies sweeter. I love them this way!
- You can do the toothpick/knife test, but remember these are only made with two (2) ingredients and they may appear undercooked. Ovens may vary.
