One thing I love about summer is the plethora of colorful fruits and vegetables. One night we were grilling out and had a lot of vegetables on hand, so we decided to make a vegetable grazing platter.
While HB was on the grill, he had the great idea to use our vegetables a different way. I decided to assemble a platter with various vegetables to munch on as the food was coming off the grill.

Grazing food does not get enough credit. Every time my family gets together, we’ll have a plethora of food for everyone to enjoy. Someone will be on the grill, baking a dessert, making drinks — you name it. It feels like every time we come together it’s a celebration.
It’s nice to have various foods and snacks to graze on while the main foods are being prepared. That’s why we knew this Summer Vegetable Grazing Platter would be just that. It’s also a platter everyone can enjoy. Just add your favorite dressing for dipping or enjoy it without it. We also have a few Pescatarians and Vegetarians in our family so it’s nice to have options for them as well.

Dipping Sauces and Ways to Enjoy This Vegetable Platter
As far as dipping sauces and dressings, it’s really up to you. Creamy dressings such as ranch, blue cheese, Caesar dressing as well as vinaigrettes go well with this platter. We ended up making a homemade blue cheese dressing infused with citrus flavors and it was absolutely incredible.

- Large Platter or Grazing Tray
Ingredients
- Broccoli
- Cherry Tomatoes
- Black Olives
- Sliced Mushrooms
- Leeks
- Carrots
- Purple Cabbage
- Red/Purple Beets
- Yellow Beets
- Spring Lettuce
Instructions
- Add a bed of spring lettuce mix to a platter or grazing tray.
- Assemble vegetables in no particular order.
- To make it fun, add spiralized or curled vegetables throughout the platter.
- Serve with your favorite dipping sauce and enjoy!
