Summer Berry Salad with Burrata and Blackberry Vinaigrette
Fruity salads were never my thing until I was introduced to a Strawberry and Spinach Salad with Balsamic Vinaigrette. Then one of my favorite eateries serves a salad topped with cranberries and red grapes that I’m absolutely obsessed with. Yes, grapes…and I LOVE IT! I wanted to start introducing more fruity salads into my world so I thought it would be a great start—and so perfect for summer. This Summer Berry Salad combines all of my favorites: fresh berries, roasted Brussels sprouts, and cheese! Of course.
The Salad of the Summer
Summer is filled with so many of my favorite things. Fresh herbs and vegetables (homegrown from our garden), fresh fruit, sunshine, and a whole lot of love! Speaking of love…I am absolutely obsessed with roasted Brussels sprouts, which is why I thought they would be a great addition to a bed of mixed greens. I added fresh basil from our garden, but that’s totally optional. Then add burrata, because YES! Everyone knows cheese makes everything better! The creamier the better which makes burrata the perfect compliment to summer berries and roasted vegetables. It gets even better. The vinaigrette is next-level amazingness! It’s made with sherry vinaigrette, blackberry jalapeño jelly, fresh herbs, and garlic.
Can we get into this fresh garlic from our garden?
This garlic is homegrown and straight from our garden! It’s our first time growing garlic, and it makes this recipe even more special. In future posts, I will be sharing more about the garden-to-table foods that we have been growing this year.
The Ingredients used:
- Strawberries
- Blackberries
- Brussels Sprouts
- Mixed Greens
- Burrata
- Extra Virgin Olive Oil
- Fresh herbs: basil and thyme
- Garlic
- Sherry Vinaigrette
- Blackberry Jalapeño Jelly
- Crushed Chili Peppers
- Salt and Black Pepper
What is Burrata?
First of all—obsessed. Burrata cheese is such an exquisite cheese that pairs well with salads, bread, pasta, and vegetables, especially roasted. It comes in what looks like a round ball with a textured outer layer of soft mozzarella and should be served at ambient temperature. You just simply tear a slit and reveal the creamy filling or tear it into pieces throughout your salad. It’s like magic! Top burrata with salt, pepper, olive oil, and crushed peppers and you will get to taste a little piece of heaven. The outer layer is absolutely edible, but some just like to enjoy the creamy filling.
Blackberry Sherry Vinaigrette
This salad is so easy to pull together. While you’re letting your Brussels sprouts get all roasted and crispy, you will gather your greens, and berries, then whip up your vinaigrette. You can also prepare your salad dressing the day before, so it will allow those flavors to marinate overnight like nobody’s business. Just allow it to sit at room temp for a bit and shake well before serving. You will get bursts of fresh herbs with every bite. Even if you want to make it as you prepare your Brussels sprouts, it will still be just as delicious! A top-tier experience.
Suggestions and tips!
- If you can’t find Blackberry Jalapeño Jelly, you can purchase one here. You may also use Blackberry jelly or jam. I like the jalapeño addition to this jelly because it gives the vinaigrette a nice punch.
- If you would like your dressing a little sweeter, you can add a little more jelly, to taste.
- You can purchase burrata at your local grocery store in the specialty cheese section. I purchased my cheese at Whole Foods. It’s a great free-range, grass-fed, vegetarian option.

Summer Berry Salad with Burrata and Blackberry Vinaigrette
Equipment
- Baking Sheet
- Cutting board
- Mason jar with lid
- Salad serving dish
Ingredients
For Summer Salad
- 4 cups or handfuls of mixed greens
- 1 pound Brussels sprouts ends trimmed and discolored leaves removed
- 8 ounces burrata cheese, room temperature (1 to 2 ounces per serving)
- 2 Cups fresh strawberries, sliced
- 1 Cup fresh blackberries
- Kosher salt and pepper to taste
Blackberry Vinaigrette Salad Dressing Ingredients
- 1/2 cup extra virgin olive oil, high quality
- 4 tablespoons sherry vinegar
- 4 tablespoons blackberry jalapeno jelly
- 3 to 6 cloves garlic finely chopped or grated
- 1/2 teaspoon finely choppped basil or dried basil leaves
- 1/2 teaspoon fresh thyme finely chopped
- 1/2 teaspoon chili flakes or to taste optional
- pinch of kosher salt and pepper or to taste
Instructions
Blackberry Vinaigrette Salad Dressing
- Add all vinaigrette ingredients to mason jar with a tight lid. Shake for 10-15 seconds. Use fork to make sure jelly is well combined (if needed).
Prep Summer Berry Salad
- Preheat oven to 400 to 425° F – I prefer 425° F
- Cut off the brown ends of the Brussels sprouts, pull off any discolored/yellow leaves, and then cut in half. Cut in quarters if you have larger Brussels sprouts to ensure they cook evenly.
- Place Brussels sprouts in a mixing bowl and toss with 2 tablespoons of olive oil and sprinkle with kosher salt and pepper (to taste).
- Place Brussels sprouts on a sheet pan and roast for 30 to 40 until crisp on the outside and tender on the inside. Some of the loose leaves may be more brown and crispy.
- Prepare salad dressing while your Brussel Sprouts are roasting.
- Remove Brussels sprouts from oven and set aside to cool. Grab serving dish.
- Add mixed greens to serving dish then top with Brussels sprouts, sliced strawberries, blackberries, and burrata cheese.
- You can drizzle or toss salad with Blackberry Vinaigrette or serve on the side.
- Serve and enjoy!
Notes
- Double, triple, etc. the recipe according to your servings needed.
- You can also roast Brussels sprouts in the air fryer. The same process just cuts the time in half and they are absolutely delicious! I generally roast my sprouts at 400° F for 8-12 minutes.
