When I first found out that we were going under quarantine, I was worried that I would miss out on all of my favorites. Mexican night at our favorite spot or my favorite dish from our local favorite Asian bistro. When reality started setting in, all of that became an afterthought. The silver lining through all of this — we have food to eat and a home to cook it in. It’s a blessing, and I’m grateful.
We’ve prepared almost every cuisine from Indian to Peruvian and have truly enjoyed cooking at home. We international, baby! We’ve even enjoyed our summer favorites as if Jill Scott’s “Family Reunion” was blasting in the background over loudspeakers. I’ve enjoyed staying home (and cooking) more than I ever imagined. Don’t get me wrong, I have my days where I just want to prepare something quick (Thank you, air fryer!), but for the most part, we look forward to Taco Night, Wok Wednesday—and the weekend to enjoy our favorite cocktails!
Can’t forget GOOD summer eats like…Catfish Nuggets (with “light bread” with a lil’ hot sauce and mustard. I’m talking a southern-style fish fry), BBQ Ribs, Grilled Veggies, and a good ol’ Seafood Boil (with snow crab legs, lobster tails, shrimp, conecuh, potatoes, my special seafood sauce – coming soon…etc.). We literally ate off of this food for the past few months. This was due to the fact that my Milestone Birthday plans got derailed (no) thanks to the “Rona”. *heavy sigh* We planned to take ALL of this seafood for my birthday celebration weekend with the family—but that’s okay. It all worked out for good.
Since we’re still self-quarantining and doing our best to keep everyone safe around us, we’ll be spending summer at home. At least until it is declared safe by med professionals AND the numbers have dropped significantly. I figured this would be the perfect time to share some of my favorite recipes that can be enjoyed at home.

Years ago, the Cucumber Gimlet instantly became my favorite cocktail at first sip! It’s so refreshing. I had to recreate it for the fall, but honestly this combo of flavors (black cherry, cucumber, and a hint of cilantro x lime) can be enjoyed all year long.
