Every year, there’s a massive debate during the holiday season centered around cranberry sauce: fresh or jellied. I, for one, am old school. Give me the cranberry sauce in the can by Ocean Spray. Yes, the one with the ridges. I don’t care if I’m dining at the fanciest restaurant when it comes to cranberry sauce…with my cornbread dressing…for my holiday spread… *clap clap clap* I want the cranberry sauce out of the can! Cranberries and Tacos Enter the Chat
Let’s see, how did we even get here? So over the holiday break, I still had Cranberry Salsa leftovers. Since HB decided to smoke a variety of meats (salmon, chicken, pork, and turkey legs) to go with our holiday feast, I said, “you know what, let’s make some tacos!” Smoked Turkey Tacos with Cranberry Salsa to be exact!
In the summer, you may remember when I shared about my newfound love for homemade tortillas (taco shells). In other words, frying them myself. They are so much better than store-bought, and I actually prefer to fry them myself. I was frying flour tortillas at the time mainly because I used them to make my Homemade Mexican Pizza. Back to the Smoked Turkey Tacos with Cranberry Salsa…
Listen…when I discovered how good corn tortillas were when you fried them at home, I decided to use them for my tacos. We used smoked turkey leftovers, cranberry salsa (which is a beautiful blend of herbs and spices), and delicately warmed cream cheese. Absolutely amazing!
I knew there had to be other ways to incorporate cranberries into the mix well after the holidays, and I’m happy that I discovered how delicious cranberries are stuffed in tacos! You have a blend of sweet and savory, then add the creaminess of the cream cheese. DIVINE!
I can’t even begin to tell you how amazing these tacos turned out. They were perfect with every bite! Smoked Turkey Tacos with Cranberry Salsa
Ingredients
- 6 to 8 tacos extra thin, yellow corn tortillas fried until golden ready to serve
- 1 ½ cup pulled/shredded smoked turkey
- 1 cup Cranberry Salsa
- ½ cup warmed cream cheese
Instructions
- Stuff tacos with pulled/shredded smoked turkey
- Add approximately 1 tablespoon of warm cream cheese to each fried taco. Adjust to your tastebuds.
- Top with fresh cranberry salsa.
- Serve and enjoy!
