Christmas morning I wanted to prepare something fancy! I opted against my usual since I would be cooking all day on the Eve and the morning of to add my finishing touches. I ran across different variations of this breakfast casserole on Facebook and saw it pinned a couple of times on Pinterest. That was my confirmation. So happy I opted for this yummy fusion, because all we had to do was wake up and breakfast was served! I prepared some yummy buttermilk biscuits to go along with it. I knew this would be perfect for any holiday, when having guests over, or just anytime. There’s plenty to share.
SLOW-COOKER BREAKFAST CASSEROLE
Ingredients
- 1 lb of ground hot turkey sausage cooked and drained
- 12 eggs
- 1 bell pepper chopped (remove seeds)
- 1 onion chopped
- 2 teaspoons of minced garlic
- 2 cups of reduced fat shredded cheese Monterey and Colby Jack + Sharp Cheddar
- 1 cup of reduced fat milk
- 32 oz package of diced frozen hash brown potatoes
- Red pepper flakes
- Sriracha for garnish and enjoyment
- Salt and pepper for seasoning
Instructions
- Spray the inside of slow cooker with cooking spray.
- Place a layer of frozen potatoes on the bottom of the slow cooker (about 1/3 for each layer).
- Next add a layer of ground, turkey sausage.
- Then add a layer of onions, bell peppers, garlic, red pepper flakes (these can be combined together).
- Ending with a layer of cheese.
- Repeat the steps starting with potatoes and ending with cheese.
- Whisk eggs, milk, salt, and pepper together. Pour over slow cooker layers, cover, and turn on low.
- Cook on low for 8-10 hours or until set.
- Serve with sriracha (or salsa, hot sauce) and enjoy!
The breakdown.
1. Place frozen potatoes on the bottom of the slow cooker.
2. Next add a layer of ground sausage.
3. Then add fresh onions, peppers, garlic, and red pepper flakes.
Combine all of the cheeses unless you use just one kind.
4. Add a layer of cheese. Repeat all the above steps then end with a final layer of cheese.
Pour egg mixture over layers. Cook until done.
And just like that you have a hearty breakfast! Enjoy!
