Happy New Year! We all know with the start of a new year is the perfect time to implement positive changes. Last year I started off the year with 21 days of vegetarian/vegan meals — and I loved it! I even acquired a taste for mushrooms thanks to the process, annnnnd the nice guy at Whole Foods who made me a Pesto and Mushroom Pizza from scratch that was to die for! Years ago, I decided I would try out 21 Days of Raw Food (this is not for everyone). It was tough, but I did it. You can read more about it here. But I’ll be honest, I’m about that REDUCETARIAN life! Yes, that’s a thing.
One of my faves (Beyoncé) has been on the vegan train for a minute now. I remember when she announced that she was going vegan to prepare for Coachella last year. I’m pretty sure she kept the same energy for tour, shows, etc. — and has openly shared the benefits of incorporating veganism into her lifestyle. Beyoncé and Jay-Z also penned the introduction to her longtime personal trainer Marco Borges’ new book: The Greenprint: Plant-Based Diet, Best Body, Better World.

To be clear, The Carters are NOT advocating for everyone to go vegan, but they do encourage incorporating more plant-based meals into our diets which will have a “profound impact on our health and the environment.” I encourage it too! I am not the food police by any stretch, I don’t believe into shaming people into a lifestyle, and with all of “arian” diets out there, I can’t tell you which way is best. But what I do know is, when I (EYE) incorporate more plant-based meals into my diet, I love how great I feel overall. There is also a misconception that Veganism = Weight Loss. NOPE! It doesn’t work like that. It’s the same with any other diet/lifestyle, everything in moderation.
I am not “going vegan”, but I am committing to more to plant-based meals in 2019! Last year was a great start, and this year I will dig deeper. Here are some of my favorite plant-based/vegetarian/vegan foods and meals that you can try in the new year!
