It’s officially fall which means fun, fall-inspired recipes. You already know that I love pumpkin spice everything and sweet, baked goods. All of that is wonderful, but I love finding ways to spice up my veggies during this time of year. Not to mention, I know I’m going to be eating good for the holiday season. I told you before my love affair with Brussels sprouts didn’t come until AFTER I became an adult. As a kid, my Mom could not pay me to eat them. I seriously can’t believe that I’m so in love with them now!
How to Spruce Up Your Brussels Sprouts
There’s just something about Roasted Brussels Sprouts that rocks my world! I still haven’t made it to the stage to eat them raw or boiled (yes, that’s a thing), but honey, roasted? Yes, yes, and yes! They also go so well with a variety of combinations. I tried cranberries last year and FELL-IN-LOVE! You know I had to incorporate them again this year.
Honey, Yes! Let’s Make it Sweet!
I love honey drizzled on my Brussels Sprouts, but guess what…if you are one who is mindful of your sugar intake, Truvia® Nectar is a great option. It’s a fairly new product to the Truvia® line and I use a lot of their products (sugar-blend, dark brown sugar blend, and sweetener for my coffee). Honey Roasted Brussels Sprouts – The Perfect Snack

Honey Roasted Brussels Sprouts with Cranberries, Pecans, & Gorgonzola
Ingredients
- 12 ounces Brussels sprouts washed, cut in halves (remove dark leaves)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1/2 cup cranberries
- 1/2 cup gorgonzola cheese
- 1/2 cup pecan halves
- 2 tablespoons honey agave or Truvia Nectar
- salt and pepper, to taste
Instructions
- Preheat over to 400 F degrees, and line baking sheet with parchment paper or aluminum foil.
- In a large bowl, combine Brussels sprouts, olive oil, salt, and pepper. Toss Brussels sprouts until fully coated and arrange on baking sheet.
- Roast for 25-30 minutes or until sprouts are roasted, tender, and with crispy with roasted leaves.
- Remove sprouts from oven and toss them with dried cranberries and pecan halves., then drizzle with honey and balsamic vinegar.
- Serve and enjoy!
