I have loved Thin Mint Cookies since I can remember. I remember when Thin Mints came with longer sleeves. If you are a real OG who loves Thin Mint Cookies, you know to put them in the freezer and enjoy them that way as well!
Homemade Chocolate Mint Cookies
You can call these cookies a Copycat Thin Mint version, but I will always get my fix for the real thing. What I do love about making them at home is how easily they come together. Just know, just because I make them at home, that won’t stop me from supporting my local Girl Scouts! Shout out to Troop 27011!
Ways to Enjoy Chocolate Mint Cookies
Add Chocolate Mint Cookies to a milkshake.
Crumble cookies over ice cream or yogurt.
Use cookies for dipping in your favorite dessert dip! I actually made an Oreo Cookie Cream Dip which was a spin off on these delicious cookies! You can also check out my Gingerbread White Chocolate Dip.
Ingredients You Will Need
Oreo Cookies: Honestly, you can use your favorite chocolate cookie, but Oreo just happens to be mine. They are DIVINE in this recipe!
Mint Extract: I encourage mint extract not peppermint extract. Peppermint extract will give these cookies more of a holiday feel like Peppermint Bark (which I also have a recipe for here).
Baking Chocolate (Semi-Sweet or Dark Chocolate): Any melting chocolate will work! You can use semi-sweet chocolate, milk chocolate, dark chocolate, or even sugar-free melting chocolate (if you want to cut some calories)!
Canola/Vegetable Oil: This is for melting chocolate when using the microwave method to help with a smoother consistency,
STORAGE
Homemade Chocolate Mint Cookies can be stored in an airtight container or storage bag for up to three months. They can also be stored in the freezer for up to six months (if they last that long).

Homemade Chocolate Mint Cookies
Equipment
- Double Boiler OR microwave-safe dish
- Silicone spatulas
- Parchment or Wax Paper
Ingredients
- 10 Oreo Sandwich Cookies (20 Cookie Halves) The cream will be removed and stored for later use if you want.
- 12 ounce bag of baking semi-sweet chocolate chips
- 2 teaspoons canola or vegetable oil (optional) (Used for melting chocolate when using the microwave method)
- 1½ teaspoons of Mint Extract
Instructions
Directions for Melting Chocolate Double Boiler Method
- Melt chocolate chips in a double-boiler until completely smooth. Stirring occasionally.
- After the chocolate has melted, add in mint extract 1/2 teaspoon at a time until you get the desired taste. If you would like more mint, add it! Note: I find the double boiler method works best!
Directions for Melting Chocolate in the Microwave
- Melt chocolate chips in a microwave-safe bowl until completely smooth (20 to 40 second increments). Stirring in between.
- Add 2 teaspoons of canola or vegetable oil once chocolate has melted to give it a smoother consistency.
- After the chocolate has melted, add in mint extract 1/2 teaspoon at a time until you get the desired taste. If you would like more mint, add it!
Preparing Chocolate Mint Cookies
- Add one cookie piece/biscuit (without cream) one by one to melted chocolate.
- Using a fork, toss cookie piece until fully coated.
- Next, lift cookie with a fork and place on a parchment or wax paper lined baking sheet.
- Place cookies in the freezer for a minimum of 20 minutes up to 1 hour. You have the option to add melted chocolate drizzle for a little razzle dazzle after cookies have set for 10 minutes.
- Once cookies completely set, remove Chocolate Mint Cookies from freezer.
- Serve and enjoy!
