I received a birthday coupon from World Market so I decided to go get me a wok! I’d been saying I was going to get one for almost a year. A girlfriend of mine had been posting her stir-fry dishes on The Gram and I was like… “That’s it…I’m going to get one!” I’m glad she shared where her wok came from, because I remembered my birthday coupon that I could only spend on non-alcoholic items (Boooo!) Kidding.
I whipped up this delicious Guiltless Shrimp Fried Rice for dinner the other night and it was YUMTASTIC! Easy-peasy!
Guiltless Shrimp Fried Rice
Ingredients
- 6 oz of extra small or small shrimp (raw or cooked)
- Frozen peas
- 1/2 cup of organic shredded carrots
- 3 organic eggs
- 1/2 cup of chopped white onions
- 4 cups of brown rice (cooked)
- Salt and pepper
- Low-sodium soy sauce
- 2 Tbsp of olive oil
Note: You don’t have to use organic, this is just what I used.
Directions
- Have your rice already prepared. I prepared about 6 cups of brown rice in my rice cooker. Some for now, some for later.
- Take out frozen peas and let them thaw. You can add them to a bowl of lukewarm water while you prep. You can actually just sit them out to thaw ahead of time if you know that this is what you will be preparing.
- Chop onion and carrots and set aside. I like to chop my shredded carrots into small pieces. Cook and/or season shrimp then set them aside.
- Add 2 Tbsps of olive oil to wok/pan (you can spray with cooking spray first if you would like). Heat wok/pan on low-medium heat for a few secs then add 3 eggs and scramble them up. You can set aside the eggs at this point if you don’t want them to be as cooked or add the rest of your ingredients (like I did).
- Add chopped onion, carrots, gently thawed peas into wok/pan stir them for a few minutes to let them get a warm and tender. Add about 3-4 cups of brown rice to the veggies and eggs in the wok/pan. Next, add shrimp — stir it up some more. Sprinkle a few shakes of salt and pepper (to taste) and add a few dashes of low-sodium soy sauce (Be careful with the soy sauce. A little goes a long way). Season to your liking. Toss all of the ingredients together for a few minutes to get them all nicely heated and married together.
- You’re done. Serve and Enjoy!
Yields 4 servings
This is my first time having a “fried” rice with brown rice and I must say it is delicious! This is a healthier alternative to your traditional fried rice. You get your power foods, good carbs, good healthy oil, and veggies all in one dish!
