Did you know that it is National Fruit and Vegetables Month? Well…neither did I! I will also make sure I won’t forget next year. This post came right on time! I haven’t gone out unless it was for essential runs — which means, I’ve been doing a great deal of cooking at home. I really enjoy it, but sometimes you are missing that one ingredient…or you have a taste for something that you don’t have on hand. This happened to me about a month ago when I was prepping for Taco Tuesday. Btw! Make sure you check out this recipe on how to make Zucchini Soft Taco Shells. Life changing! Okay—back to Taco Tuesday. So I was making fresh pico de gallo to go with my Homemade Mexican Pizzas, and it wasn’t complete because I couldn’t find jalapeno peppers anywhere on my grocery run. But guess what we have now — WE HAVE PEPPERS! Yes, I captured this photo a few days ago. I’m happy that our garden is thriving and now we have fresh veggies that will go from our mini farm-to table-to bellies!
Lately I’ve been craving veggies and potatoes. When I tell you…God is always listening! I have a whole Farmers Market up in here, y’all! Thanks to a local church (Thank you, Guiding Light!) for giving away boxes of fresh produce, I was able to get my hands on a 20-lb box of fruits and veggies! I’m so grateful for these offerings.
I’m pretty excited that I can make the baked potatoes that I’ve been craving, and I have more cucumbers for my fresh-pressed juice and cucumber gimlets! I may make some onion rings with a housemade sauce too. The good thing is we are stocked, and we don’t have to go out. A friend of mine mentioned freezing veggies for soup. Smart idea, right? Now I want to know? Do you wash your fresh produce when you bring it home from the market? I know with the Rona still out there, you can never be too careful. I wash my fruit/veggies in a huge bowl. I’ve washed it with mild soap (like Dawn), but started using vinegar + water. Do what’s best for you, just please don’t use bleach or ingest it.
FRUIT AND VEGGIE WASH
- In a large bowl or in your sink, fill with lukewarm water
- Add about 1 cup of white vinegar
- Let fruit/veggies soak for approximately seven (7) minutes
- Rinse well
With the start of June we celebrate National Fresh Fruit and Vegetable Month. It’s perfect timing as the growing season is in full swing and there is an abundance of fresh produce available locally. The goal of National Fresh Fruit and Vegetable Month is to increase daily consumption of fresh produce.
