Shrimp Cauliflower Fried Rice
This is one of those things that I just couldn’t wait to share! If you follow me on the networks then you already know how hard it was for me to get my hands on riced cauliflower. You don’t understand. Me, trying to find cauliflower like my life depended on it? It must be special! Yes, I know that I can buy cauliflower anywhere and rice it myself, but after finding out I can purchase riced cauliflower already riced, I was sold!
For the love of cauliflower…
For those who didn’t know, I avoided cauliflower my entire life until the day I discovered you could turn cauliflower into a pizza crust or cheesy bread! Then I went on to try cauliflower mashed potatoes. And then I made Roasted Buffalo Cauliflower.
When I prepared cauliflower (outside of the norm) for the first time, I went the all-organic route. Let’s just say, it took a lot of work. Not to mention, I did not own a food processor at the time. Looking back, I was “ricing” it, but I had no idea it would for real-for real taste JUST like rice! When my Insta-friend posted that she found riced cauliflower at her local market, I had to go get it.
CAULIFLOWER IS THE NEW BLACK
Here’s the thing, apparently riced cauliflower is the new black because everybody wants it and gotta have it! I actually think this is a trend that’s here to stay, which is why I’m so happy that I found it! Anything to get more veggies in, right? After taking the plunge with my Zoodles, I couldn’t wait to add another healthy swap to my favorites list.

FRIED RICE THAT WON’T DISAPPOINT
I decided to make Shrimp Cauliflower “Fried” Rice and it did not disappoint. It’s almost too good to be true, but then I went back for guiltless seconds. I’m absolutely amazed at how much it tastes like rice! I love traditional fried rice, but I’m so glad to have this healthy swap in my life! I really feel like it needs its own theme music.
I’m a believer and I’m proud to say it! I hope you will give it a try. Several brands make cauliflower crumbles which is great for making cauliflower pizza and cauliflower mashed potatoes. I also encourage you to rice it yourself, especially if you have a food processor. It will save you time and money. Just rice it, seal “rice” in zip baggies, and toss it into the freezer until you’re ready to use it. Just call it a Meal Prep Party!

Shrimp Cauliflower Fried Rice
Ingredients
- 12 ounces to 1 pound of small shrimp peeled, and deveined (optional)
- 2 large eggs
- 1/2 cup of frozen green pea cooked
- 1/2 cup of chopped or sliced carrots
- 1/2 cup of chopped white onions
- 3-4 cups of riced cauliflower cooked
- 3 tablespoons of Liquid Aminos or reduced sodium soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons extra virgin olive oil, high quality
- 1/2 teaspoon of ground ginger
- salt and pepper to taste
Instructions
- Heat olive oil in a large skillet or wok over medium heat.
- Add shrimp and cook for approximately 3 minutes or until they are pink. Add a few shakes of salt and pepper if you wish. Set shrimp aside.
- Scramble two eggs (separate pan). Set aside.
- Add onion, carrots, and peas to large skillet or wok and cook vegetables until they are tender.
- Stir in riced cauliflower. Add liquid aminos, sesame oil, ground ginger and stir crazy. Just kidding. Stir for approximately 3-4 minutes so the "rice" can cook through and become soft.
- Toss fried rice for about two (2) minutes, then stir in shrimp.
- Serve and enjoy!

This looks so tasty! I think it’s so funny (and cool) that riced cauliflower is such a trend these days. I heard from a friend that Trader Joes sells the bags of riced cauliflower now and apparently there will be lines of people for the bags the morning they are delivered to her store, haha!
