If you like pizza and you like eggs/egg whites…you will love this! It’s an easy way to get in some protein and veggies at the same time!
EGG WHITE PIZZA
Yields – 1 Serving
Ingredients
- 1 serving of Egg Whites
- 1/4 cup of red sauce (I used Classico Spicy Tomato & Basil)
- 2 handfuls of Kale or Spinach (I used Kale)
- 1/4 cup of 2% Mozzarella Cheese
- Olive oil
Directions
(For steamed kale: I just steam it for about 3 minutes then toss in olive oil. Simple and works for me). I saved some kale for the side to eat with my pizza. You can put it all on the pizza if you wish.
- Sauté kale or spinach and toss for about 1 minute (or your desired texture).
- Set aside.
For egg whites:
- Pour in skillet and let the egg whites set up.
- When they have cooked 2/3 of the way through, flip them over. Be careful because this can get tricky. Just make sure you have some skills!
- Let the other side finish cooking about 15-20 seconds.
- Add pasta sauce, then kale, and lastly reduced-fat cheese.
- Remove from heat.
Note: *You don’t have to flip the egg whites , that’s just the way I prepared my “pizza”!
