I’ve been a fan of couscous for some time. It’s one of those grains that is often overlooked. I think it pairs well as a side dish as well as a main dish. There are also many fun ways to incorporate your favorite proteins when enjoying couscous. But have you tried fried couscous?
Reinventing fried rice.
Think fried rice, but instead of using fried rice, use couscous. Fried rice is generally cooked by being stir-fried in a wok or pan with vegetables, eggs, and proteins: including pork, shrimp, chicken, crab, or beef.
I’ve always enjoyed fried rice with Asian (fusion) dishes. Like rice, couscous is typically boiled or steamed and then lightly fried in a pan or wok. I like to add vegetables such as white onions, green onions, carrots, peas, etc.
Egg Fried Couscous with Vegetables
I love this dish because it’s so colorful. You can add a plethora of vegetables, herbs, and spices and just make it absolutely your own — and delicious. I do prefer my Egg Fried Couscous more on the Asian-inspired side. Of course, using different ingredients to bring out those flavors is always fun.
Plant Eggs versus Traditional Eggs
I made this recipe using Just Egg – plant eggs. This is a fun way to incorporate plant-based foods into my diet. Making it with couscous makes it exceptionally filling! Honestly, truly — you wouldn’t even realize you were eating plant eggs, because it’s just that good. But if you do like traditional eggs, feel free to use about four large eggs in this recipe. We love a variety of foods over here, so we try to incorporate a range for everyone’s taste buds. Both ways taste great!
Ingredients you will need for Fried Couscous:
Couscous (Cooked): You will prepare the couscous according to the directions on the box. I like this brand.
Vegetable Broth: You can use water or broth when boiling/steaming your couscous. I like to use vegetable broth because it adds more flavor. You can also use chicken or beef broth if you decide to add a protein.
Extra Virgin Olive Oil: Using high-quality olive oil is a must.
Eggs or Plant Eggs: I made this recipe with plant eggs found here. However, regular eggs are equally delicious. I encourage you to try it both ways! You won’t be disappointed.
Seasoning: (Low-sodium Soy Sauce and Garlic Pepper): You will adjust your seasonings to your palate. And before you ask, soy sauce is a seasoning in liquid form. Less is more! In addition, garlic pepper has become a staple in my household. Season to taste…always!
Vegetables (Garlic Cloves, Fresh Ginger, Green Bell Pepper, Orange Bell Pepper, Yellow Bell Pepper, Red Onions, and Green Onions): I tried to keep this fried couscous similar to its grainy counterpart, but I wanted to elevate it!! With all of these colorful vegetables, you can’t go wrong!
Basil: This fresh herb was a fun addition. Since I was making this fried couscous plant-based, I wanted to load it up with all the plants. Using basil leaves is totally optional!

Egg Fried Couscous with Vegetables
Equipment
- Wok or Stir Fry Pan
Ingredients
- 1¼ cups water or vegetable broth according to directions on box of couscous – I used vergetable broth
- 3 cups cooked couscous (store-bought) prepared in vegetable broth and according to directions
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons olive oil
- ¼ teaspoon salt or to taste
- 1/4 teaspoon garlic pepper
- 1 tablespoon fresh ginger minced
- 1 small green bell pepper seeded and diced
- 1 small orange bell pepper seeded and diced
- 1 small yellow bell pepper seeded and diced
- 1/2 red onion diced
- 4 garlic cloves smashed
- 4 Just Egg plant eggs ( =12 tablespoons ) OR 4 large eggs
- 4 green onions chopped for garnish
- fresh basil leaves for garnish
Instructions
- Remove cover from couscous and fluff with a fork, then set aside.
- In a mixing bowl, whisk together eggs, salt, and garlic pepper. Set aside.
- In another pan, heat olive oil over medium heat. Sauté garlic and ginger for 1 minute.
- Add diced bell peppers and red onions. Sauté until tender. Slide vegetables on one side of pan.
- Pour whisked eggs or plant eggs, then scramble into vegetable mixture,
- Add couscous, soy sauce, to the vegetable mixture to stir and fry until combined.
- Divide into bowls topped with green onions and fresh basil leaves.
- Serve and enjoy!
