I know you are like Black Bean Brownies? Is this a prank? No, it is not a prank and YES! black bean brownies are simply amazing! When I first heard about them a few years ago, I said No Thanks! Over the past few years, I have been “more” open to trying new things, especially foods that are Weight Watchers friendly—then they came back up in my meeting and I said, Okay, I will be making those this weekend! I’ve prepared so many yummy recipes that are super delicious while following the plan so I gave it a try. These brownies are a huge stretch, in the opposite direction, from my Slutty Brownies that I shared with you a while ago. Did the name give them away? I just want to go on record and say, these Black Bean Brownies are definitely worth every bite! I couldn’t’ even taste the beans.
Basically, you eliminate the egg and oil and substitute them with black beans. They are low in fat and calories, and high in protein and fiber!
Recipe! Black Bean Brownies
What You Will Need
- 15 oz can black beans
- 19.5 oz box chocolate brownie mix
Instructions

- Pour can of beans in a colander, drain, and rinse well.
- Place beans back in the can and fill can with water.
- Put beans and water in blender.
- Blend until smooth.
- Mix brownie package mix with puréed beans. (You do not ne3ed to add eggs or oil)
- Spray [9X13] baking dish with cooking spray.
- Cook brownies according to package directions.
- Allow brownies to cool.
- Serve and enjoy!

NOTE: The PointsPlus value will vary depending on which brownie mix you decide to use (They are probably about the same, but check to be sure). I used a new mix, Mocha Fudge Brownie Mix by Pillsbury – 13 X 9 Family Size! Very rich in color and flavor! Also there are some other recipes, but I opted to go with the easiest! You can also substitute regular brownie mix for dark chocolate, reduced fat, or sugar free mix, etc. I may even try the peanut butter cup brownie mix! I’m sure they all will be great!
