Stocked Up!
This is what happened. Remember when Snowpocalypse hit the southeast? Well, here in Alabama when there’s any mention of snow (or ice) the state shuts down. Literally. Trust me, there’s good reason. We’re not equipped for snow and icy conditions like our lovely northerners that like to make jokes about us when it does happen. After getting snowed in at work during Snowpocalypse in 2014 (which you can read about here), you will never catch me slippin’. I will be prepared. By prepared I mean picking up enough groceries and essentials to ride out a potential “snowstorm”, because we probably won’t be able to drive anywhere for days.
Stay Prepared with Charcoal and a Grill
When there’s mass panic surrounding a snowstorm, most people clean out the milk, eggs, and bread aisle at the grocery store. What we decided to do was grill out and I’m sure glad we did! The snow couldn’t have come at a better time, because it arrived right before football Saturday and the National Championship game. We had enough food to last for days which included: chicken, shrimp, smoked wings, sausage, and one of my favorites…BBQ ribs!

Don’t Wait Until Summer to Strike Up the Grill
Most people grill in the spring/summer, but around football season—that’s just what my family does. We went with the “new year, new me” theme, so we made sure we had healthy greens in the mix. Speaking of greens, this slaw goes exceptionally well with Ribs! But let’s talk about these Barbecue Ribs. First off, I have to mention that the Pilleteri Rub used on these ribs is made right here in Alabama.
The Sauce
We prepared the Barbecue Ribs with a blue cheese and amber lager-infused Hickory BBQ sauce. They were a nice twist to traditional BBQ ribs. Blue cheese is one of my favorite cheeses. The sharp bite of blue cheese went perfect with sweetness of the hickory BBQ sauce with the hint of amber lager. Then add the flavorful, grilled BBQ ribs, and you’ve got yourself a winning combo!

Barbecue Ribs with Blue Cheese Hickory Sauce
Ingredients
- 1 Slab Beef or Pork Ribs
- Pilleteri’s Bold & Spicy seasoning for rub
- Wynn’s Grain & Spice BBQ Blend seasoning for rub
- Bed of mixed greens, optional
Blue Cheese Infused Hickory Infused BBQ Sauce
- 4 ounces Michelob Ultra Amber or any Amber Lager optional
- 6 ounces blue cheese crumbles save 2 oz for toppings/garnish
- 16 ounces Hickory BBQ sauce
Instructions
Ribs Preparation
- Coat ribs well by massaging the spices into the ribs, front and back.
- Wrap meat after prepped with rub and refrigerate for at least 24 hours. Not a day sooner.
Ready to Grill
- Preheat charcoal or gas grill.
- Unwrap meat after prepped with rub and refrigerated for at least 24 hours. Not a day sooner.
- Slow smoke meat over indirect heat for approximately 1.5 to 2 hours and the internal temperature of the ribs reads 180˚ to 190˚.
BLUE CHEESE INFUSED HICKORY BBQ SAUCE
- Mix all ingredients in a sauce pot over low heat until all blue cheese crumbles have melted.
- Place ribs over a bed of mixed green and top with BBQ Sauce and Blue Cheese crumbles.
- Serve and enjoy!
Notes
- Allow ribs to marinate in spices for at least 24 hours.
- Cover the ribs with plastic wrap and foil tightly and let marinate in the dry rub and spices overnight or for at least 8 hours.
- Sauce can be used with any meat of your choice.
- Pilleteri’s Rub can be found here. Buy and shop local! You can also find it at Walmart.
- If you can’t find Wynn’s BBQ Blend seasoning, you can use one that is comparable.
