Brussels Sprouts as a Kid
You may remember me sharing that when I was a kid, you couldn’t pay me a $100/week allowance to eat Brussels sprouts. I mean…my toddler nephew even enjoyed them more than I did, so I knew I had to give them a try — again. All of that changed after visiting our local Earth Fare years ago. They had Roasted Brussels Sprouts on the hot bar, so I ordered a meal and was so amazed at how well they tasted.
My love affair with Brussels Sprouts has been consistent ever since that day. Now, we all know everything is better with cheese, so I figured pairing crumbled blue cheese with bacon pieces would be absolutely divine! This roasted veggie instantly became my new favorite side dish! I’ve even eaten a whole pan by myself—especially when I make these Honey Roasted Brussels Sprouts with Cranberries, Pecans, & Gorgonzola. This vegetable makes an excellent snack, too!

Can Bacon Blue Cheese Brussels Sprouts be made vegan-friendly?
Absolutely! To make this recipe completely vegan-friendly, use Vegan Bleu Cheese crumbles like these crumbles by Follow Your Heart. You can find vegan parmesan cheese by their brand here as well. I also really like LightLife’s Smoky Bacon Tempeh found here and have used it in several recipes including my Bacon, Egg and Cheese Sandwich (Made from Plants) and Vegan TTLA Sandwich.
ROASTING VEGGIES VS. AIR FRYING
One day I decided to be adventurous and make roasted veggies in the air fryer. All though the leaves were slightly browned, they didn’t taste burned. They had a soft center, plenty of moisture (i.e., not dried out), and were still crispy. They took 15 minutes to cook in the air fryer, which cut the roasting time down by 10 to 15 minutes. I still prefer roasting my Brussels in the oven, but every now and then I’ll use the air fryer.

Bacon Blue Cheese Brussels Sprouts
Equipment
- Baking Sheet
- Cutting board
Ingredients
- 1½ pound bag Brussels sprouts, ends trimmed and yellow leaves removed
- 5- 7 pieces of thick-cut bacon, cooked and crumbled into pieces See notes for vegan-friendly version
- ½ teaspoon Mis' Rubins – White Magic All-Purpose seasoning or salt and pepper, to taste
- 1/2 cup blue cheese crumbles save 2 tablespoons for garnish
- 2 tablespoons Parmesan cheese, grated, for garnish optional
Instructions
- Preheat oven to 425F.
- Cook bacon until crispy and set aside.
- Cut off the brown ends of the Brussels sprouts, pull off any discolored/yellow leaves, and then cut in half. Cut in quarters if you have larger brussels sprouts to ensure they cook evenly.
- Place Brussels sprouts in a mixing bowl and toss with 2 tablespoons of olive oil and sprinkle with White Magic seasoning.
- Line a baking sheet with heavy-duty aluminum foil, then brush with one tablespoon of olive oil or spray baking sheet with cooking spray.
- Arrange Brussels sprouts on baking sheet.
- Roast Brussels sprouts for 20 minutes. Toss them about halfway through.
- Cook until sprouts are crispy and golden brown on the edges. Some of the loose leaves will be more brown and crispy.
- Crumble bacon pieces to prepare to add to your dish.
- Remove brussels sprouts from oven and sprinkle bacon pieces and blue cheese crumbles.
- Transfer to serving dish and garnish with bacon pieces, blue cheese crumbles, and parmesan cheese.
- Serve and enjoy!

- You can also roast your brussels sprouts in the air fryer.
